Here is one of the cheapest and easiest but tasty preparation. This preparation has minimum requirements. It is known that sujuna (sujana) is a good but costly vegetable. It is often used in several indian recipes. But few people know that a good tasty recipe can be prepared from its leaves which someone can get free of cost.

Ingredients

  • Sujuna leaves - 250 gm. It can be obtained free of cost. Of course it is desirable to obtain fresh new leaves.
  • Moong dal (lentil) - 75 gm
  • Whole red chilly - 2 pieces
  • Sugar - 1/2 tsp
  • Garlic - 6 or 7 petals
  • Mustard seed - 1/2  tsp
  • oil - 50 ml
  • salt  to taste

Process

Separate out stems from sujuna leaves and clean it properly. You may chop sujuna to smaller size or simply leave it as such.

Put a pan on the stove and add moong dal to it. Roast the dal till it looks light brown. Take out the dal and clean with water. Again put it on the pan on the stove and  add 2 cups of water. Let it boil. As it is half boiled add the cleaned sujuna leaves to it. If required add little water. Add salt and stir for about 3 minutes so that the sujuna leaves boil well.

Take it out of the pan. Again put the empty pan on stove and add oil to the pan. Add mustard and red chill (broken to 2 or 3 pieces). Next add crushed garlic to the mixture. After about one minute add boiled sujuna leaves with dal to the light masala on pan. Stir well. Add sugar. Stir again and after half minutes take it out from and stove and let it cool to the eatable limit.

Serve with rice and curd.
